Macadamia Pesto


  • 50g macadamia nuts 
  • 80g basil
  • 50g parmesan / pecorino
  • 150ml olive oil
  • 2x garlic cloves (crushed)



Preheat oven to 180C/350F. Place nuts in a moderate oven until golden.

Place cooked nuts into a food processor with the basil, cheese, olive oil, and garlic cloves. Process until smooth and season with salt and pepper to taste.

Serve in a pasta dish, or use as a delicious topping for roasted cod or salmon.
