Ingredients:
Serves 6-8
Filling:
- 3 large peaches peeled and sliced.
- 50g sugar
- 2 eggs separated
- 1/2 tsp vanilla
- 75g macadamia nuts finely chopped (reserve 3 tbsp)
- 15g plain flour
- Whipped cream
Pastry:
- 80g plain flour
- 25 sugar
- 60g butter
- 1 egg yolk
- 30ml ice water
Method:
Preheat oven to 180C/350F.
Place nuts in moderate oven until golden. Grease a 23cm pie dish.
Pastry:
Mix the flour, butter, sugar, and egg yolks in a bowl. Integrate the water and work the mixture to a smooth dough. Roll the dough onto a lightly floured surface before pressing the pastry evenly across the bottom and sides of prepared pie dish. With a fork, prick the bottom and sides of the dough and then bake in a preheated oven for 15 minutes, or until light brown. Put this aside to cool.
Filling:
Arrange the peaches on the pastry shell once cooled. In a bowl, beat the egg yolks and sugar until thick and light. Incorporate the vanilla, macadamia nuts and flour to this mixture. Separately, beat the egg whites until stiff but not dry. Fold into the nut mixture before pouring this over the peaches. Sprinkle the remaining macadamia nuts on top. Bake this in a preheated oven for 35-40 minutes. Serve with whipped cream.
